Ingredients
- 240 ml oat flour
- 2 scoops vanilla whey protein powder
- 5 ml baking powder
- 120 ml liquid egg whites
- 120 ml Greek yogurt (plain, non-fat)
- 60 ml almond milk (unsweetened)
- 5 ml vanilla extract
- Fresh strawberries and blueberries for topping
- Sugar-free caramel syrup
- Mint leaves for garnish
- Optional: Whipped Greek yogurt or light whipped cream on the side
Instructions
- In a large bowl, whisk together the oat flour, protein powder, and baking powder.
- In a separate bowl, combine the egg whites, Greek yogurt, almond milk, and vanilla extract until smooth.
- Slowly fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Heat a non-stick skillet over medium-low heat and lightly coat with cooking spray.
- Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Stack the pancakes and top with sliced fresh strawberries and blueberries.
- Drizzle generously with sugar-free caramel syrup and garnish with a sprig of mint.
- Serve immediately with a side of whipped Greek yogurt.
