Ingredients
- 1 Sesame seed bun
- 230 g Ground beef (80/20 blend)
- 1 slice Swiss cheese
- 2 slices Crispy bacon
- 60 ml Sautéed mushrooms
- 1 thick slice Tomato
- 60 ml Mixed baby greens (with chard or beet greens)
- 3-4 Pickle chips
- 15 ml Yellow mustard
- 15 ml Butter
- Salt and black pepper to taste
Instructions
- Shape the ground beef into a thick patty slightly wider than the bun. Season both sides generously with salt and pepper.
- In a skillet over medium-high heat, cook the bacon until crispy. Remove and set aside on paper towels.
- In the same skillet using the bacon fat, sauté sliced mushrooms until browned. Remove and set aside.
- Place the beef patty in the hot skillet. Sear for 3-4 minutes until a deep crust forms, then flip.
- Immediately place the Swiss cheese slice on the patty and cover with a lid for 1-2 minutes, until melted and the burger reaches 160°F (71°C).
- While the burger rests, spread butter on the cut sides of the bun and toast in a separate pan until golden brown.
- Assemble the burger: Spread mustard on the bottom bun, followed by pickles. Place the cheesy patty on top, then the sautéed mushrooms and bacon. Top with the tomato slice and mixed greens.
- Close with the top bun and serve immediately.

Serve on a wooden board with a side of thick-cut potato wedges or sweet potato fries. Pairs well with a cold lager or a craft IPA.
