Spiced watermelon & mint mocktails

Ingredients

  • 1 small seedless watermelon, cubed
  • 1 bunch fresh mint leaves
  • 2 limes, juiced
  • 30 ml agave syrup or honey
  • 5 ml chili-salt (for rimming)
  • Club soda or sparkling water
  • Ice cubes

Instructions

  1. Rim the glasses: Rub a lime wedge around the rim of your glasses and dip them into a small plate of chili-salt.
  2. Prepare the base: In a blender, puree the watermelon cubes until smooth. Strain through a fine-mesh sieve to remove pulp if a clearer consistency is desired.
  3. Muddle: In each glass, add 5-6 mint leaves and a splash of lime juice. Lightly muddle to release the oils without shredding the leaves.
  4. Mix: Pour the watermelon juice and agave syrup into the glasses. Stir well.
  5. Assemble: Fill the glasses with ice. Top with club soda.
  6. Garnish: Add a sprig of fresh mint and a small wedge of watermelon to the side of the glass.

Serving Suggestions

Serve immediately on a sunny patio. These refreshing drinks pair perfectly with light appetizers like ceviche or spicy fish tacos.
