Ingredients

  • 240 ml chocolate whey protein powder
  • 120 ml almond flour
  • 80 ml unsweetened cocoa powder
  • 1 ml salt
  • 120 ml Greek yogurt, plain and non-fat
  • 60 ml almond milk, unsweetened
  • 60 ml sugar-free maple syrup
  • 1 large egg
  • 60 ml dark chocolate chips (70% cocoa or higher)
  • 5 ml vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk together the protein powder, almond flour, cocoa powder, and salt until well combined.
  3. In a separate medium bowl, whisk the egg, Greek yogurt, almond milk, maple syrup, and vanilla extract until smooth.
  4. Slowly fold the wet ingredients into the dry ingredients using a spatula. Do not overmix; stir until just combined.
  5. Gently fold in the dark chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 18-22 minutes. The center should be set but slightly soft to the touch (do not overbake or they will become dry).
  8. Allow the brownies to cool completely in the pan before slicing into 9 squares.
