Ingredients
- 240 ml chocolate whey protein powder
- 120 ml almond flour
- 80 ml unsweetened cocoa powder
- 1 ml salt
- 120 ml Greek yogurt, plain and non-fat
- 60 ml almond milk, unsweetened
- 60 ml sugar-free maple syrup
- 1 large egg
- 60 ml dark chocolate chips (70% cocoa or higher)
- 5 ml vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, whisk together the protein powder, almond flour, cocoa powder, and salt until well combined.
- In a separate medium bowl, whisk the egg, Greek yogurt, almond milk, maple syrup, and vanilla extract until smooth.
- Slowly fold the wet ingredients into the dry ingredients using a spatula. Do not overmix; stir until just combined.
- Gently fold in the dark chocolate chips.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 18-22 minutes. The center should be set but slightly soft to the touch (do not overbake or they will become dry).
- Allow the brownies to cool completely in the pan before slicing into 9 squares.
